Don’t waste your pumpkin this Halloween!
After you have decapitated your pumpkin and removed the guts why not use it to make a mouth-wateringly spooktacular pumpkin soup fit for a ghouly feast! ingredients:
• 1 dusty pumpkin
• 1.5 cups vegetable stock (really depends on your pumpkin size, the water should just cover the pumpkin in the pan)
• 1 onion • 1 or 2 cloves of garlic
• fresh thyme
• 1 tsp cumin & paprika (or cinnamon & nutmeg if you prefer)
• 1/2 cup soaked cashew nuts – soak 4 hours (a great substitute to cream: adds a lovely creaminess and gives cows a break!)
• 2 tablespoons coconut oil
• beetles – optional
directions: 1. Heat up the coconut oil in a soup pan
2. Sautee the onions for about 3-5 minutes. Add in your spices and herbs
3. Cook for a few more minutes until fragrant
4. Add in diced pumpkin
5. Cover with vegetable stock
6. Cook for about 20 minutes until tender
7. Let the soup cool
8. Put the cashew nuts in a blender along with the soup and blend up until creamy
9. Serve with avocado slices, feta cheese & toasted cashews
